A Much-Loved Recipe from Laura’s Kitchen

This recipe was inspired by my mother Laura, whose cooking has always been full of generous, well-balanced flavour. Her instinct for seasoning even the simplest ingredients is one of the reasons these chicken tenderloins became such a favourite in her catering business, where they remained a much-loved choice for many years.
I have made a few little tweaks of my own, adjusting the flour mixtures with onion and garlic powder however, the heart of this recipe is still very much Mum’s: beautifully seasoned chicken wrapped in a crisp, golden crumb.
It is a simple family recipe, but it carries the kind of flavour that keeps people coming back for another piece, which is exactly why it has been such a hit for so long.
I love that this recipe still carries so much of my mother’s cooking within it, it's simple, full of flavour and made to be shared, the kind of food that has brought people together around Mum’s table and through her catering business for many years.
