Garlic, rosemary and olive oil preserve
This little jar has become one of my favourite kitchen staples. Ever since I started learning to cook from scratch, I've been looking for simple ways to save time without sacrificing flavour, and this has been one of the best discoveries.
Instead of peeling and chopping garlic every time I cook, I simply grab a spoonful straight from the fridge. The garlic is ready to go, and over time, the rosemary gently infuses the olive oil, creating the most beautiful flavour. It's perfect for pasta sauces, soups, casseroles, roast vegetables, marinades, homemade bread, or simply drizzled into a hot pan to start almost any savoury meal.
When some of the prep work has already been done, it's much easier to throw together a wholesome meal after a busy day.
Always use a clean spoon when serving from the jar, and keep it refrigerated to help reduce the risk of botulism. The olive oil will naturally solidify in the fridge, but don't worry, that's completely normal. Simply scoop out what you need and it will quickly soften once it hits the warm pan.
My girls love helping me peel the garlic cloves and pack the jars. It's such a simple way to involve children in the kitchen, and I truly believe these little moments together help build confidence and create lifelong memories around cooking.

Recipe:
Ingredients:
Garlic cloves - 300gms
Olive Oil
Fresh Rosemary (if you have some)
Method:
peel all garlic cloves, then dice them, them give them a rough chop so that it's smaller in size.
please in a clean, glass jar
pour olive oil over the garlic, so that it's all covered in oil
If you have a fresh rosemary spring, place it in the jar so that its completely covered in oil.
place your newly preserved garlic in the fridge.
