An old-fashioned, slow-cooked stew
Recipe by: Jennifer Walsh
There are few things more comforting than walking through the front door after a long day to the rich aroma of a slow-cooked beef stew waiting for you. It's the kind of meal that invites everyone to gather around the table, slow down for a while, and enjoy good food together.
This Country Beef Stew was created through a little trial and error, plenty of taste testing, and a genuine desire to create a hearty, old-fashioned recipe using simple ingredients. Along the way, I discovered a few new cooking techniques, made a couple of adjustments, and found that the second day was even better than the first.
Whether you're preparing dinner before heading off to work or simply looking for a wholesome family meal to warm you on a cold evening, I hope this recipe brings as much comfort to your home as it has to mine.

To Serve
Serve with a generous helping of buttery mashed potatoes, allowing the rich gravy to soak into every spoonful. If you have some warm, crusty ciabatta or your favourite rustic bread on hand, it's perfect for mopping up every last bit of the delicious sauce, or a fluffy bed of long grain rice.
Side note: if serving with mashed potatoes, ditich the potatoes from within the stew.
I hope this Country Beef Stew brings warmth, comfort and plenty of happy moments around your table.
Enjoy.
Warm regards,
Jennifer Walsh
