Me being me, I spontaneously decided to make this recipe without first checking what I actually had on hand. Naturally, I discovered halfway through that I was missing a few ingredients, so a little improvisation was required. Rather than abandoning the recipe , I worked with what I had and made a few simple changes — which, thankfully, worked beautifully.

I was out of corn and didn’t have any bacon, so I substituted peas and adjusted the seasoning with

1 tsp salt, ½ tsp onion powder and ½ tsp garlic powder. I also added an extra 2 tbsp of cornflour, which gave the chowder the thicker, creamier consistency I was looking for.

The recipe itself was incredibly easy to put together and very beginner-friendly. It turned out rich in flavour, creamy and wonderfully comforting — and, perhaps the greatest part of all, my children actually enjoyed it.

What I learned: A recipe doesn’t necessarily fall apart when you’re missing an ingredient or two. I’m becoming much more confident making little adjustments as I go — tasting, seasoning and finding substitutes rather than giving up on a recipe because I don’t have everything listed, on hand.

Overall, this was a delicious, comforting meal and one I’d happily make again — perhaps next time I’ll even remember to check the fridge first. No, I more than likely won't, if I'm being honest.

This is a good find, I bought it a couple years back, such a good collection of recipes, a very nice place to lear from Jen 👍

Hey Lola, yes I picked it up and couldn't put it back down well, I wouldn't really, not unless I was paying for it. I could see so much learning potential, I'm so glad I went ahead and bought it. ☺️
