A creamy pan cooked chicken with a silky sauce

There’s something about bringing a little of your heritage into the food you cook, that makes a recipe feel that bit more special.
When I started putting together my version of Marry Me Chicken, I knew I wanted to give it a subtle nod to my Maltese heritage. Garlic has always been one of those familiar flavours in our cooking, and semi-sun-dried tomatoes bring that beautiful richness and sweetness that immediately feels Mediterranean to me.
So I took the creamy, comforting idea behind, "Marry Me Chicken" and made it my own, using plenty of garlic, rosemary, mushrooms and semi-sun-dried tomatoes, all brought together with a splash of white wine and a rich, silky, sauce.
I also used this recipe as an opportunity to learn something new: beurre manié, the traditional French technique of kneading softened butter and flour together and gradually adding it to a hot sauce to thicken it. It gave me exactly the glossy, thickened finish I was looking for.
It may not be a traditional Maltese recipe, and I wouldn't pretend that it is. Instead, it's a recipe inspired by flavours that connect me to my heritage, combined with a cooking technique I was excited to learn.
And that really is what my journey in the kitchen is about, learning traditional techniques, cooking from scratch, drawing inspiration from where I come from, and slowly finding my own way of bringing it all together.

So good.
We really enjoyed this, I was in a rush so I ended up slicing it up and serving it with pasta, kids loved it. Oh, the "semi"-sun-dried-tomatoes, game changer!
