A good potato side dish can completely make a meal, and these Smashed Baked Potatoes have very quickly earned a place in my recipe collection.
I originally made them to serve alongside my Marry Me Chicken. I wanted something that would catch all of that creamy, garlicky sauce, while still having plenty of texture of its own. These were perfect — fluffy and soft through the centre, with rough, buttery edges that become beautifully golden and crisp in the oven.
They’re also another reminder for me that learning to cook from scratch isn’t necessarily about complicated recipes or fancy techniques. Sometimes it’s learning why a simple extra step matters. Letting the boiled potatoes steam-dry before smashing and roasting them might seem insignificant, but it makes such a difference to those gorgeous crispy edges.
With garlic, rosemary, thyme, butter, olive oil and a little Parmesan, they’re packed with flavour without taking away from whatever you’re serving them with.
