Some of the simplest recipes carry the loveliest memories. It was my dad who first taught me how to prepare this crisp pita bread, and it has remained one of those easy little recipes I return to again and again. Being such a versatile recipe, I changed up the herbs and spices and created my own version, and you can do that too.
I love to brush generously with olive oil, garlic, Moroccan seasoning and sea salt, each piece bakes until beautifully golden and crisp. It’s wonderfully moreish and perfect for serving with dips, cheese platters, soups or a relaxed Mediterranean spread.


This is one of those recipes that, once you’ve made it, you’ll have locked into your memory for life. My dad taught me how to prepare these crisp pita bread pieces, and they’ve been a favourite ever since. They’re quick and easy to make, wonderfully versatile and pair beautifully with cheese boards, soups, stews, salads, or whatever you fancy. You can also change the seasoning to complement the meal you have in mind.
