You're going to love these delicious savoury cheese muffins by RecipeTin Eats, we certainly did!
They're quick and easy to make using simple pantry staples, and they were an instant hit with the kids. I made a batch of twelve and popped four straight into the freezer for the girls' lunchboxes.
They're also a fantastic breakfast option. My girls often wake up with no appetite, but as soon as we're halfway to school, I hear, "Mum, I'm hungry!" Having homemade muffins in the freezer means I can quickly grab one for breakfast on the go without reaching for packaged snacks.
I also discovered they're the perfect accompaniment to a warm bowl of homemade soup, making them just as delicious for lunch as they are for breakfast.

Change it up...
If you enjoy bacon, try dicing a little and folding it through the batter. Or, for a fun Hawaiian-pizza inspired twist, add some finely diced pineapple along with the bacon, such a delicious lunchbox treat, for the kids.
For another variation, try finely diced pumpkin with mozzarella and finely diced sage. The earthy sweetness of the pumpkin pairs beautifully with the creamy cheese and fragrant sage.
One of the things I love most about this recipe is how versatile it is. Once you've mastered the basic recipe, the flavour combinations are almost endless. It's definitely one worth saving for future baking experiments.
