Every recipe has a story, and this one began with a day trip my dad and brother took to Portarlington on the Bellarine Peninsula. They visited a local fishmonger known for wild caught seafood, and dad came home with a bag of fresh mussels. Before we even lit the stove, there was something to learn. I stood beside him as he carefully scrubbed and debearded each mussel, listening closely as he explained every step. He showed me a trick, if a mussel is slightly open, tap it, if it closes, it's alive and safe to cook, if it stays open, discard it. After cooking, any mussels that don't open should also be discarded. I love that kind of kitchen wisdom, then I began cooking, and it was blissful.

Eating this meal served over al dente spaghetti is absolutely delicious, but for me, nothing will ever compare to a thick slice of crusty ciabatta. There's something so comforting about tearing off a piece of warm bread, dipping it into that rich tomato and white wine sauce, piling on a few chunky vegetables and a plump mussel, then taking that first bite. Pure heaven.

Looking back, I don't think I'll remember every little detail, what I'll remember is the afternoon spent beside Dad in the kitchen, learning something new, laughing together, then sitting down with Mum and Dad to enjoy a meal we'd created together. Those simple moments are becoming some of my most treasured memories.

Food has a wonderful way of bringing people together, and I hope my Mediterranean Mussels recipe, does exactly that in your home. Gather the people you love, tear off a piece of crusty bread, pour a glass of white wine, and savour not just the meal, but the memories you're creating around the table.

From my kitchen to your kitchen,

Warm regards,

Jennifer Walsh
