One-Pot Paprika Chicken & Potatoes
Paprika-spiced chicken, potatoes & peas in a rich tomato sauce
This One-Pot Paprika Chicken & Potatoes came together on one of those days where I didn’t have a set plan for dinner, I just knew I wanted something warm, saucy and full of flavour.
I started with onion, garlic, paprika and cumin, then built the sauce with tomato, herbs, a little red wine and chicken stock. From there, I added chicken thighs, potatoes and peas and let everything gently cook together in my Dutch oven.
The result was exactly the kind of dinner I love: simple, comforting and made from everyday ingredients, with a rich tomato sauce that works beautifully over creamy mashed potato.
My girls loved it too, which is always a good sign.

My recipes are heavily inspired by my mother. I didn’t realise just how much attention I had been paying to the way she cooked until I began taking a real interest in cooking myself.
So here is my One-Pot Paprika Chicken & Potatoes. I’m genuinely proud to share this one with you — well, all of them really — but my children, who are definitely my biggest critics, absolutely gobbled this one up.
A little note on the paprika: I used regular paprika for this dish, but sweet paprika is a lovely option for children if you want a softer, milder flavour. Any paprika will work well here, so use the one you enjoy most.

I hope this becomes one of those easy dinners you come back to when you’re after something warm, comforting and full of flavour.
