Buttery Couscous
Updated: Sep 16
.... with gentle citrus notes
Recipe Creator: Jennifer Walsh
This Buttery Couscous is light, fluffy and deliberately simple, allowing it to sit comfortably alongside more richly flavoured dishes. Butter gives each grain a lovely richness, while fresh parsley and finely grated lemon zest bring gentle citrus notes that lift the couscous without overpowering the rest of the meal.
It is a beautiful accompaniment to my slow-cooked Moroccan Beef Brisket, where it can soak up the deeply flavoured cooking juices and gravy. It would also complement Moroccan tagines, grilled chicken or lamb, baked fish and trays of seasonal roasted vegetables.

This buttery couscous may be simple, but it brings so much to the table. The gentle citrus, fresh herbs and toasted almonds allow those lovely seasonal flavours to come through without competing with the rest of the meal.
When it is served alongside something that has been slowly cooking all day, the whole meal feels familiar and comforting. The aromas and flavours create an almost hypnotic sense of nostalgia, reminding us that sometimes the simplest food can bring back the warmest memories.
