Pesto is definitely one of my favourite sauces... or should I say condiment? It's both really.
Rich, fresh and bursting with flavour, it's one of those kitchen staples I always love having on hand,
and especially on my toast with eggs.
It's incredibly versatile. Toss it through freshly cooked pasta, spread it on a sandwich, serve it alongside grilled meats, or add it to a charcuterie board as a delicious dip.
My favourite way to enjoy it, though, is the simplest of all... generously spread over thick slices of toasted sourdough, topped with perfectly cooked eggs. Simple, fresh and absolutely delicious.
Making pesto from herbs you've grown yourself makes it even more special. There's something incredibly satisfying about wandering out to the garden, picking a handful of fresh basil, and turning it into something so vibrant and full of flavour in just a few minutes.
Once you've made homemade pesto, it's hard to go back.
